An all time new staple for me is a mung bean “pancake” Pasarat. It is wheat-free and egg-dairy free (though I am not vegan) . The sprouted beans whirred in the cuisenart with ginger, peppers, cilantro, asefoetida, salt and then cooked with fine onions is always an obvious winner.

Thank you for that totally no fuss, fresh recipe! Funny, I was just thinking near Diwali that I really need to practice sprouting mung beans on my own and here is a great reason to do so! Sprouted mung beans should be recognized as a super food given their nutrition.
